When you think about it, Valentine’s Day comes at a really cozy time. Winter’s almost over. However, that doesn’t mean you can’t make the most of the last few chilly nights before spring arrives. Why not head out on a late-winter camping trip and revel in the last few weeks of wintery wonders with your sweetie? The two RV-friendly recipes below are perfect to share after a great long hike in the woods. Best of all, these recipes are made in a slow cooker, which means they couldn’t be any easier to throw together. Moreover, they’ll allow you to save propane and reduce moisture buildup that would normally occur when using the stove.

Loaded Potato Soup

Valentines Day RecipesYou’ll need:

  • 6 large baking potatoes, peeled and sliced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 quart chicken broth
  • ¼ cup butter
  • 1 cup half-and-half
  • 1½ cups shredded cheddar cheese
  • Salt, pepper, chopped chives, crumbled bacon, and sour cream to taste

Instructions:

Place potatoes, onion, garlic, broth, and butter in slow cooker. Cook on high for 4 hours. Stir soup, mashing potatoes slightly until desired texture is reached. Add half and half and cheese and combine. Serve immediately and top with salt, pepper, chives, bacon, and sour cream.

RV Friendly Recipes

You’ll need:

  • 16 ounces elbow macaroni, dry
  • 2 cups whole milk
  • 1 (12-ounce) can evaporated milk
  • 1 teaspoon garlic salt
  • 3 cups shredded cheese
  • 2 tbsp butter
  • Extra cheese for topping

Instructions:

Add all ingredients to slow cooker. Cook on lowest possible setting for 2-3 hours, stirring occasionally and checking pasta periodically. When pasta is cooked al dente, serve and top with additional cheese. These simple recipes are sure to make a wonderful winter camping trip even better, so don’t forget to stock up on ingredients and pack the slow cooker before you hit the road!
