Breakfast Sausage Hash

A day of adventure starts with a filling and flavorful breakfast.This versatile recipe works with a variety of spices and veggies. Get creative and mix it up!

Ingredients:

1 16-ounce package of ground Italian sausage

1 20-ounce package of shredded hashbrowns

1 sweet onion

1 sweet bell peppers

4 eggs

Salt and pepper (for an extra kick of flavor, add garlic pepper or salt)

Tin foil

Directions:

Dice the onion and peppers into small pieces. Cut four pieces of foil. Divide the sausage into four and place on the bottom of the tin foil. Add the hashbrowns, onion and pepper on top of the sausage. Sprinkle with salt and pepper. Wrap foil tightly and set each foil pack near coals. Cook until tender, about 15 minutes. Top with a fried egg.

Italian Chicken and Veggie Foil Packs

This colorful and nutritious campfire dinner is packed with flavor. Plus, the easy prep and clean up means you’ll spend less time in your outdoor kitchen. Just save room for dessert!

Ingredients:

2 chicken breasts

2 sweet bell peppers

1 sweet onion

2 medium zucchini

1 16 ounce bottle Italian dressing

Gallon-size resealable bag

Tin foil

Directions:

Cut the chicken and vegetables into bite-sized pieces and add to resealable bag. Pour the bottle of Italian dressing into the bag and massage into the chicken and veggies. Let marinate for 4 hours. Remove chicken and veggies from marinade and distribute evenly onto four large pieces of foil. Wrap foil tightly and set each foil pack near coals. Cook until tender, about 20 minutes.

Campfire S’mores Bananas

Enjoy an ooey, gooey spin on the traditional campfire treat with these creamy roasted S’mores bananas. You don’t have to stick to the traditional S’more flavors either – try adding some peanut butter, jelly or crunchy cereal!

Ingredients:

4 bananas

1/2 cup chocolate chips

1/2 cup mini marshmallows

1/2 cup crushed graham crackers

Tin foil

Directions:

Cut a slit lengthwise on the curved side of each banana peel. Open the slit carefully and form a pocket in the banana (be careful not to open the entire peel). Add ½ cup of each: chocolate chips, mini marshmallows and graham crackers. Wrap the banana securely in tin foil, with the opening at the top. Set bananas on top of campfire grate or near coals and cook for 8-10 minutes.
