Basically a tiny house on wheels, we got this setup to travel easier with our toddler.
It's equipped with:

Dinette (converts to a full bed)

The camper sits on a 2017 RAM 2500 crew cab, 6.4L gas pickup with 4WD and added suspension support to make your off road travel easier. Great to stay off grid for a couple days (see recommendations), we recently took it for a 7 week trip up to Canada and back and couldn't have asked for a better rig.

RecommendationsIn CO: Guanella pass is one of our favorite places to cool off in the summer, or Buffalo Creek for mountain bikers. RMNP is just an hour away with amazing hiking, camping, climbing options. Peaceful Valley and Dick's campground is also great for some creek time, bouldering and hiking!
Little further: Grand Teton NP, Yellowstone NP, Zion NP, Arches NP are all within less than a day of driving and both Wyoming and Utah are amazing for dispersed camping! Staying in the middle of nowhere with no cell service is a fantastic way to forget about work, stress, daily problems, can't recommend it enough :)
Truck handles dirt roads fine and the 175 Watt solar panel, 20 gallon water tank and 20 pound propane tank allows for a good 4-5 days totally off grid.
